- Take a large glass and half fill with ice
- Add 50ml Sea Arch Coastal Juniper
- Add 150ml homemade rhubarb juice
- Add a few drops of cardamom syrup and stir
- Top up with soda if desired
- Garnish with rhubarb ribbons – use a peeler and work down the length of the stalk

- Cut some rhubarb sticks, add sugar to taste and water to cover, bring to the boil and simmer for 10 minutes then pass through a fine cloth
